Spiced Up Chopped Up Salad

Chopped Salad Ingredients

For the salad

  • Spinach
  • Iceberg Lettuce
  • Cabbage
  • Shredded Carrots
  • Cucumbers cut into rounds then the rounds cut in half
  • Radishes cut into rounds
  • Yellow onion cut into 1/4 in squares
  • Jalapeno cut into rounds

Mustard Jalapeno Vinaigrette

  • 2 cups olive oil
  • 2 1/2 cups white vinegar
  • 1/4 to 1/2 cup of yellow mustard
  • Salt & pepper to taste
  • Approx 4 tablespoons of minced garlic
  • 2 tablespoons garlic powder
  • 2 tablespoons dried dill
  • 1/2 teaspoon of thyme
  • 1/4 teaspoon of cumin
  • One jalapeno finely minced

Chop equal amounts of spinach, iceberg and cabbage into small pieces. Mix with other salad ingredients.


For the vinaigrette, whisk ingredients together in a bowl. Tip: Flavors blend better together when they have sat in refrigerator for 24-48 hours.
